Overview:
Building codes and fire safety doesn't have to keep you up at night. The more that you communicate with the people who issue the permits, the better you will sleep. Wondering if the inspector might stop by or if someone inside the attraction might get hurt is something you shouldn't have to worry about. As long as you have prepared your haunt the safe way.

Reach out to your local fire marshal & building inspector. The more prepared & professional your are, the better.
Use the National Fire Protection Agency 101 (NFPA 101) and the International Building Code (ICC IBC) books for reference. Your region may have different standards but usually never beyond these guidelines.
Hire a design consultant who can walk you through the setup process and explain the codes in simple terms.
Prepare a safety plan, fire plan, & evacuation plan to your marshal & any inspectors. Keep all your records on the things you buy for safety.
